Our research focuses on probiotics, particularly lactic acid bacteria, that can produce bacteriocins, vitamins, and extracellular polysaccharides, among other substances, as well as their application in the food industry. We are aiming to understand the mechanism by which bacteriocins act against foodborne pathogens, the regulation of probiotic-derived metabolites (such as bacteriocins, folate, VB12, etc.) on the gastrointestinal (GI) microbiota, and the impact of functional lactic acid bacteria on immunity.

With a Ph.D. in Microbiology, obtained from Zhejiang University in 2009, and subsequent postdoctoral research at Florida State University, USA, they bring a wealth of international experience to their role. Since joining Zhejiang Gongshang University in 2015,Ping Li has been at the forefront of groundbreaking research, focusing on the multifaceted properties of lactic acid bacteria. Their work delves into the production of bacteriocins, vitamins, and extracellular polysaccharides by these bacteria, with a specific emphasis on their application in the food industry. As a testament to their research prowess,Ā  has secured numerous grants, notably as the project leader for projects investigating the regulatory effects and molecular mechanisms of bacteriocins on the intestinal epithelial barrier, as well as the impact of lactic acid bacteria-derived metabolites on the gastrointestinal microbiota. Our research focuses on probiotics, particularly lactic acid bacteria, that can produce bacteriocins, vitamins, and extracellular polysaccharides, among other substances, as well as their application in the food industry. We are aiming to understand the mechanism by which bacteriocins act against foodborne pathogens, the regulation of probiotic-derived metabolites (such as bacteriocins, folate, VB12, etc.) on the gastrointestinal (GI) microbiota, and the impact of functional lactic acid bacteria on immunity.
